Halloween Dinner

Trick-or-Treat! 

Halloween is a time for my family to walk around the neighborhood enjoying being together and soaking in the excitement of magical costumes. The night comes alive with the anticipation of Twix, Snickers, Reese’s and Sour Patch Kids! What is your family hoping to taste this Halloween?! Let an evening of trading begin!

This year I am excited to serve my family some fuel in the form of bell pepper jack-o-lanterns before heading out to collect candy. It truly only takes a minute to carve two triangle eyes and a triangle nose jack-o-lantern on each pepper. Then you can choose what to fill your peppers with! I chose to mix macaroni and cheese with chili. You could stuff your peppers with rice & beans, noodles & ground beef, chicken & cheese…there are endless possibilities as long as it isn’t too runny to seep through the jack-o-lantern design. You can go homemade or prepackaged for your filling. You have the option to keep the orange bell pepper raw and simply use it as the bowl to spoon a precooked warm dinner in. Or you can cook your meat, add any additional ingredients, stuff the carved peppers, and bake it all together at 350 for 30 minutes for a cooked pepper taste. Versatile, delicious, nutritious, and darling!

I am setting out some playful apple monster mouth smiles using apple slices, peanut butter and mini marshmallows. My kids and I devour this! I love that they are getting some apple slices in before the candy feast.

I am also cutting the lid off a small sized pie pumpkin and scooping out the insides to serve ranch dressing inside. Setting out veggie slices such as carrots, celery, and cucumber slices make for a special Halloween veggie tray.

Enjoy a spooky night with your favorite little superhero, fairy, witch or ghost! Make the night as simple or as detailed as you desire. Does your family dress up in themes? Do you make any costumes? Do you attend a ward trunk-or-treat? Relish these memories!
